Everything happens on the device. Audio is analysed in memory for the tuner and never recorded or sent anywhere.

On iPhone you can define a tuning the catalog does not have, name it, and keep it — the neck re-maps and note drills follow, because a fretboard you actually play in C standard deserves drills in C standard.
Note naming follows your language too: letters, solfège or German H, in ten languages, independent of the tuning you choose.
